Bacon Smashed Yams

Maple Bacon Smashed Sweet Potatoes (paleo)

  • 1lb petite sweet potatoes
  • 2 tbsp grass fed butter
  • 2 tbsp pure maple syrup
  • 1/2 tsp cinnamon
  • Sea salt
  • 6-8 slices of bacon
  • 1 tbsp pure maple syrup (drizzle on top)
Preheat oven to 400 and line 2 sheet pans with parchment paper. Bring a pot of water with a pinch of salt to a boil. Cut potatoes in 1 inch slices. Drop the potato slices into boiling water. Cook for 10 minutes or till they are fork tender. While they are cooking melt butter and stir in maple syrup, cinnamon, and a pinch of salt. Remove potatoes and allow them to cool and dry on a wire rack. You want them to feel dry to the touch. Place them on the prepared sheet pan. Make a slice on each side of the potato just through the skin- this makes them easier to smash.

Return potatoes to the sheet pan. Use a glass with a flat bottom to smash potato slices. Twist the glass to remove it easier. Brush each smashed slice with butter mixture. Place in the oven and bake for 15 minutes or till they are caramelized. Arrange bacon on the other prepared sheet pan and bake at 400 for 10 minutes. You don't want to fully cook the bacon. Just till the edges have curled a little. Flip each potato and wrap in bacon, secure with a tooth pick if needed. Return to the oven and bake for 8-10 minutes or till bacon is crisp. Drain on a paper towel. Drizzle with maple syrup. Serve warm. Enjoy!
